I can&#039;t stop myself from pointing out that 2-day old poached eggs (the tips say you can make them that far in advance) doesn&#039;t conjure the same level of deliciousness. The best eggs are freshly cooked to order, after all! :) Do yourself (and mom) a favour, and make it &quot;in the moment&quot;.</description>

		<description>I LOVE Eggs Benedict - but I prefer to go with a low-fat version of Hollandaise. It&#039;s equally delicious - 1 cup plain yogurt, 1/2 cup light mayonnaise, some dijon mustard, salt and lemon. 

Also, poaching an egg is MUCH easier when you swirl the boiled water around to make a whirlpool, which you drop the egg into.
